Most perishables require refrigeration. The fridge (35–40°F) slows bacterial growth dramatically — chicken that lasts 2 days at room temperature keeps for 2–3 days refrigerated and 9 months frozen. The freezer (0°F) essentially halts spoilage, though quality degrades over time through freezer burn and texture changes. Pantry storage works for dry goods, canned items, and foods with natural preservatives like salt, sugar, and vinegar.

Understanding best by, sell by, and use by dates

Manufacturers' dates are largely about peak quality, not safety. 'Best by' indicates optimal flavor — not the last safe day. 'Sell by' is a retailer stocking guide.
